Oct. 29 is National Oatmeal Day! To celebrate, we’ve rounded up some delicious oatmeal recipes, which can be cooked in a variety of ways. Whether you use the stovetop, refrigerator, oven, slow cooker, or instant pot, there’s a recipe for you!
Blueberry Muffin Oatmeal

3/4 cup milk or water
1 tablespoon blueberry jelly
1 tablespoon brown sugar
1 tablespoon chopped walnuts or almonds
1/4 teaspoon cinnamon
handful of fresh blueberries
In a small bowl, combine the brown sugar, nuts, and cinnamon. Set aside. Combine the oats and milk or water in a microwave-safe bowl. Stir, then cook over high heat for 2 1/2 – 3 minutes until most of the liquid is absorbed and oats are cooked. Stir in the blueberry jelly. Sprinkle the brown sugar mixture over the top of the oatmeal then return the bowl to the microwave and cook over high heat for 30-45 more seconds. The brown sugar will caramelize into the top of the oatmeal. Splash with another tablespoon of milk if desired then sprinkle with fresh blueberries.
Cinnamon Roll Oatmeal

In a medium saucepan over high heat, bring 1/2 cup milk to a boil. Stir in oats and 1/2 tsp. cinnamon, reduce heat to low, and simmer until oats are tender and creamy, 5 minutes. For the icing: In a small bowl, whisk together remaining 2 tsp. milk and powdered sugar. Serve oatmeal in a bowl drizzled with icing and sprinkled with remaining 1/2 tsp. cinnamon.
Overnight Oats 3 Ways

½ cup Old Fashioned Oatmeal
¼ cup Lowfat, plain Greek Yogurt
¼ cup Almond Milk
1 tablespoon Chia Seeds
Combine oatmeal, greek yogurt, almond milk and chia seeds in container with lid. Add sweetener of choice – honey, agave, or maple syrup (and cocoa powder for choco banana flavor) and shake. Refrigerate overnight.
If you would like your overnight oats warm, microwave for 30-60 seconds. Otherwise top with remaining toppings!
- Choco Banana Topping: Sweetener: Agave Syrup. Top: Bananas, Cocoa Powder, Pecans/Walnuts.
- PB&J: Sweetener: Honey. Top: Strawberries and Peanut Butter.
- Maple Blueberry: Sweetener: Maple Syrup. Top: Blueberries, Slivered Almonds, Cinnamon.
Baked Oatmeal

1/2 cup melted butter
1/2 cup honey
2 eggs, beaten
3 cups old fashioned oats
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla
1 1/2 cups milk
1 cup fruit or nuts of choice
In a bowl mix together the butter, honey and eggs. Add in the oats, baking powder, salt, cinnamon, vanilla and the milk. Mix and then fold in fruit of choice. Bake in a lightly greased 8 x 8 pan at 350 degrees for 30-40 minutes or until golden brown. May be served with milk and more fruit on top!
Pumpkin Pie Slow Cooker Oatmeal

1 cup Steel Cut Oats
4 cups almond milk, unsweetened
1.5 teaspoons pumpkin spice
1/2 cup pumpkin puree
2 tablespoons maple syrup
Place all ingredients in a crock pot, mix well. Cook on high for 2-4 hours. Top with pecans, cashew butter, and crasins. Enjoy!
Instant Pot Oatmeal
Recipe via My Plant Based Family
1 cup steel cut oats
3 cups water
spices of your choice
toppings of your choice
Dump oats into the Instant Pot followed by the water. Close the lid and close the vent. Press manual and use the arrow buttons to go down to 3 minutes. After the oats finish cooling, press the off button or unplug the Instant Pot so the pressure will release naturally. After the pressure releases, open the lid and give the oatmeal a good stir. It will probably have extra liquid, this will absorb as it cools. Add cinnamon or other additions and allow to cool slightly before serving. Top oatmeal with fresh fruit of your choice.
