There are two kinds of people in this world, the eat dessert for breakfast kind and everyone else. I am of the first variety. I could, and would if calories didn’t count, eat something sweet for every meal. My sweet tooth knows no limits.
During the summer, I find myself looking for something simple and satisfying. Bonus points if I can use some of the bountiful fruits available here in SC. Think peaches or blueberries.
This past week I spent a few days at Folly Beach with my husband’s family and his aunt graciously sent us home with a huge bag full of handpicked blueberries. Sure I could throw them in a morning smoothie, or mix them into pancakes, but y’all know that’s just not my style.
Blueberry Dump Cake
Dump Cake to the rescue! What is a dump cake you might ask? Well, it is virtually a cake mix, sugar, butter, and fruit of your choice dumped together in a baking dish. Can it possibly get any easier? I think not! Visit your favorite local blueberry patch and then enjoy!
Ingredients
- 4 cups blueberries (I used fresh but frozen are fine)
- 1 cup unsalted butter
- 1 cup white sugar
- 1 box cake mix (I used French Vanilla flavor)
Directions
Preheat oven to 350. Mix together blueberries and sugar and pour into the bottom of 9×13 baking dish.
Pour dry cake mix on top. Cut butter into tablespoons and distribute evenly over cake.
Place in oven for 50 minutes or until cake top is browned. Serve warm or cold with vanilla ice cream and whip cream!
