Creative Healthy Breakfast Recipes for the Picky Eater | Columbia SC Moms BlogAre you the proud mama of a picky eater? Are the only foods they want to eat fried or an unnatural color? Fear not, the following recipes have been verified as “delicious” by my three picky-eating sons! You CAN successfully sneak in superfoods throughout the day – even with breakfast!

Below are my top 3 sneaky breakfasts for the picky eater! The key to these recipes not only lie in the ingredients, but the presentation of them as well.

Green Eggs and Ham

Ingredients

2-3 eggs per person
Green, leafy veggies (e.g., spinach, kale, broccoli)
Meat (we use sliced turkey, cut into cubes, instead of ham)

Preparation and Directions

  • Read the Dr. Seuss classic, “Green Eggs And Ham“. Be sure to stress how much the characters really enjoy eating green eggs and ham after complaining about it throughout the entire book.
  • Get out a blender. Make it clear to your children do not touch! This is a tool for cooking.
  • Crack all eggs into the blender.
  • Decide aloud they are “big boys/girls” and responsible enough to use the blender with supervision. “Let” them put in the green veggies. Make a big deal about how they are big helpers and how proud mommy is.
  • Blend. (I set the blender on the floor so they can press the buttons themselves. Make sure to supervise to avoid accidents.)
  • Cook the green eggs mixture in a pan on the stove (just as you would for regular scrambled eggs).
  • Toss in the desired cooked meat.
  • Serve and enjoy!

Tip:

If they start to hesitate at any part, start throwing in random phrases from the book, “I would eat it in the house! I would eat it on a train!”

Honey Oatmeal (or “Optimus Prime Oatmeal”)

Ingredients

Oatmeal (we used the gluten free kind)
Chia seeds
Golden roasted milled flaxseeds with blueberry
Hemp seeds (seeds do NOT alter the mood!)
Tea bag of a kid-safe tea for flavor*
Almond milk (or any kind of milk you choose)
Honey (We use raw, local honey… please remember no honey for children under one year, minimum)

* Note: Make sure to research what is safe tea for your child. Some parents of ADHD kids choose to supplement tea, while others try to avoid caffeine. Direct any questions to your pediatrician. As for us, we use naturally caffeine-free green tea with lemongrass.

Preparation and Directions

  • Based on the size of your family, determine how much oatmeal you want to make from the instructions on the package .
  • After boiling the appropriate amount of water based on the serving, place a tea bag in the water and allow it to steep (Tip: Avoid teas with a laxative effect for toilet trainers)
  • Remove tea bag and put in oats to soak/cook in the hot tea.
  • Let it cool for a bit.
  • Mix in seeds, milk, and honey.
  • Serve and enjoy!

Ninja Turtle Shells

Ingredients

Pancake batter
Leafy green veggies (e.g., Kale, spinach, broccoli)
Super-seeds:  Chia, flax, hemp (optional)
Tea bag (optional)
Local raw honey

Preparation and Directions

  • Mix your choice of pancake batter. Tweak it by soaking a tea bag in the liquid ingredients for a few minutes, if desired.
  • Use the blender or food processor to liquefy the greens. Mix with the pancake batter.
  • Slip in some seeds for a superfood (and plant-based protein).
  • Cook according to batter’s instruction.
  • Drizzle honey over the cooling pancakes in a rectangle pattern to make it look like a turtle’s back. (This is an alternative to syrup.)
  • Feel free to serve it now, as is. (The good thing about turtles-even Ninja Turtles-is they pull their head and limbs in for protection.) Or you can create a head and limbs with seasonal fruits, and use raisins for the masks and weapons.
  • Serve and enjoy!
